BUFFALO, N.Y. (WKBW) — With summer on the horizon, many fruits and vegetables are about to be in season. Calvin College, prepared foods manager at the Lexington Co-opmarket on Hertel Avenue, showed us how to make a cold soup packed with vitamins and nutrients to keep you healthy.
Gazpacho is a refreshing and healthy snack or lunch, College says you can pair it with some grilled chicken, fish or have it with chips like salsa.
Gazpacho - Makes 1 gallon.
Ingredients:
1 zucchini
1 yellow squash
1 carrot (peeled)
1 cucumber (peeled and seeded)
1 red bell pepper
1/2 red onion (peeled)
Cut all of the above ingredients into a large dice.
1/2 oz lemon juice
1/2 oz lime juice
1/2 tsp vegan worcestershire
1/2 jalapeno (seeded)
1.25 tbl brown sugar
5 roma tomatoes (large dice)
1/2 tbl minced garlic
1-32oz organic vegetable juice
1/2 tbl chili powder
1/2 tbl kosher salt
3 tsp black pepper
1/2 tbl sriracha
Combine all of the above ingredients together. Using a blender or immersion blender, puree till smooth but still a bit course. Garnish with yogurt, cilantro and lime zest. Serve cold.
