Another favorite treat in the city of Buffalo is celebrated on Monday, with it being designated National Sponge Candy Day.
The designation goes with the latest expansion of Fowler's Candy to HarborCenter. The company claims to be the originator of the treat in the Queen City, making it since 1910.

This date is chosen because it marks the "traditional" start to sponge candy making season. Candy makers usually need cooler temperatures and less humidity to make the treat. But, technological advancements have allowed companies like Fowlers to make the treat year round.
