BUFFALO, N.Y. (WKBW) — Pumpkins are everywhere this time of year! You pass them in the grocery store but did you know they are pretty healthy for you too.
Pumpkins are a great source of Vitamin A, fiber and potassium. Vitamin A helps your skin, eyes and immune system. Jill Chiacchia, owner of BeHealthy Institute in Hamburg says there are so many different ways to incorporate pumpkin into your diet.
Chiacchia recommends for people to cook the pumpkin like you would any squash and to buy a "Pumpkin Pie" pumpkin for more flavor. She says adding pumpkin to your soup, roasted veggies, or even some seeds to your granola are quick and easy ways to get some pumpkin in your next meal.
Here's a recipe for a Caribbean pumpkin soup.
